Citrus Halibut
Ingredients
3 lb halibut steaks, 3/4
1 1/2 medium onions, finely chopped
6 cloves garlic, minced
3 tablespoons butter
3/8 cup fresh parsley, chopped
1 1/2 teaspoons orange rind, grated
3/4 teaspoon salt
3/8 teaspoon black pepper
3/4 cup frozen concentrated orange juice
3 tablespoons fresh lemon juice
Recipe
1. OVEN COOKING Rinse halibut in cold water and dry using paper toweling.
2. Arrange halibut in a 9" x 13" oven-proof baking dish.
3. Preheat oven to 400 F.
4. In a frying pan, add butter, onion and garlic and saute' until translucent. Remove from heat and stir in parsley, orange peel, salt and pepper.
5. Spread mixture over halibut steaks.
6. In a small bowl, mix together orange juice and lemon juice. Sprinkle juice over steaks, but be careful not to wash away the onion/garlic mixture. Bake fish in preheated 400 F oven for 20 to 22 minutes, turning over at about 10 minutes of cooking time. Continue cooking until time expires or until fish flakes easily with a fork.
7. DO NOT OVERCOOK FISH.
8. Spoon hot juices over fish.
9. Serve at once.
